Confession: I have a MAJOR sweet tooth. I’ve cut way back on sweets lately, and have been feeling much better because of it, but I still like to treat myself from time to time. One of my favourite treats that takes me back to my university days are Starbuck’s Petite Vanilla Bean Scones. My housemate and I used to get these on weekends and they pair perfectly with a hazelnut soy chai tea misto. (Go try one now if you’ve never had one! Get it with a real tea bag, not that gross chai syrup.)

When I found this copycat Starbucks Vanilla Bean Scones recipe I just knew I had to try it out. The perfect springy, weekend treat. Be warned, the scones this recipe makes do not taste exactly like the ones from Starbucks. These ones are a bit fluffier, so if you prefer a denser scone this recipe might not be your favourite. Still, everyone who tried them loved them and one former Starbucks employee even said, “better than starbucks!”

*I made a few changes to the recipe: I skipped the vanilla bean and used a 1/4 tsp of this instead. It’s a lot more cost effective and just as good. You can pick it up at Williams Sonoma. Also, for the icing, I just used 2 cups of icing sugar instead of 3. If you want a really thick icing, then use the third cup but I thought it was great without it!
